Does this fan come with a wall switch option?
Does not come with a handheld remote. The fan comes with a wall switch mount (wireless/battery operated) controller that would replace the existing on/off light switch.

Can we use incandescent bulbs in this? LED's give us massive headaches and give off a very poor light quality.
This Fan light kit comes with integrated LED, it is not recommended to replace it.

Is the downrod adjustable or can it be replaced with a longer downrod?
A longer downrod can be purchased. The manufacturer suggested getting it through a vendor - the only one I found who could special order it for me was Bellacor.

Can the fan be installed without the down rod to make it more flush with the ceiling?
This Fan cannot be hung without the downrod.
