can the length of the cords be shortened for a low ceiling height so that not so much of the mechanism shows?

Yes, the pulleys on the pendant can be used to adjust the height of the hanging lights during assembly but not while light in use.

This appears to have a different color coding for the wires - not red, black, white. The wires are clear jacket with light blue stripe, white stripe and no stripe. Which ones correspond to red, black and white? (Lost the instructions.)
